ALMOST FOUR YEARS AGO, BARRY McDONALD, DAVID BAFFSKY AND I WERE CASTING AROUND TO FIND A PRACTICAL WAY TO MAKE OUR CONTRIBUTION TO INDIGENOUS OUTCOMES. WE CONSULTED THE NATIONAL CENTRE OF INDIGENOUS EXCELLENCE AT REDFERN AND ALSO VISITED ULURU, THEN TALKED TO VARIOUS TOP EXECUTIVE CHEFS AND RESTAURANTEURS IN SYDNEY, INCLUDING NEIL PERRY AND GUILLAME BRAHIMI, WHO WERE ALSO KEEN TO DO THEIR PART.

THE CHEFS WERE PREPARED TO PERSONALLY MENTOR AND EMPLOY INDIGENOUS TRAINEES IN CLASSICAL CUISINE IF THEY COULD PLAY A PART IN WRITING A PRACTICAL CURRICULUM. THUS EVOLVED A THREE YEAR COURSE, DESIGNED WITH INPUT FROM JILL DUPLEIX AND TERRY DURACK, AS WELL AS, THE WILLIAM ANGLISS INSTITIUTE. GRADUATES WOULD BE GUARANTEED EMPLOYMENT UPON COMPLETION OF THE THREE-YEAR COURSE.

SO HERE WE ARE TODAY WITH THE FIRST EIGHT GRADUATES TO CELEBRATE THEIR SUCCESS.
WE ARE SO PROUD OF THEM.

IN 2015, NICI (NATIONAL INDIGENOUS CULLINARY INSTITUTE) WILL EXPAND TO MELBOURNE WITH A STRING OF MELBOURNE RESTAURANTS WAITING TO WELCOME A NEW INTAKE OF INDIGENOUS APPRENTICES. OUR FRIENDS AT THE WILLIAM ANGLISS INSTITUTE WILL AGAIN BE HELPING IN THE TRAINING.

PRIME MINISTER, WHILST OUR EARLY FUNDING CAME FROM PRIVATE SECTOR SPONSORS HERE TODAY, AND FROM INDIVIDUALS AND FROM THE PARTICIPATING RESTAURANTS THEMSELVES, THE FEDERAL GOVERNMENT HAS INCREASINGLY PLAYED A SIGNIFICENT FINANCIAL ROLE – AND IN PARTICULAR, I WOULD LIKE TO ACKOWLEDGE THE ROLE OF THE PRIME MINISTER’S DEPARTMENT, AND YOUR PERSONAL SUPPORT FOR THIS GROWING NON- PROFIT ENTERPRISE THAT DELIVERS NOT ONLY EMPLOYED INDIGENOUS GRADUATES THAT YOU SEE BEFORE YOU TODAY, BUT ALSO ROLE MODELS FOR A NEW FIELD OF INDIGENOUS SUCCESS.
