Project Description

Zac Nicholson completed his apprenticeship at Fishtales Café Warnambool in 2003 and moved on to the Hotel Warnambool, where he learnt the ins and outs of working within a busy kitchen. After travelling around Canada and the US for 18 months, he returned to Melbourne in 2006 and worked at the Wesley Anne and Corner Hotels. With a down-to-earth approach and passion for working with great produce, Zac joined the kitchen team at Rockpool Bar & Grill Melbourne in 2008. Recognising his outstanding talent and dedication, Neil Perry put Zac through his paces and promoted him to Head Chef five years later.
