This week we have welcomed the next group of National Indigenous Culinary Institute pre-apprentice students. The group of 34NICI Pre app students are the second group to commence the pre-apprentice program, which is a four week course designed to introduce them to certificate III commercial cookery.

The students have been selected from across the state and will spend the next few weeks learning their way around a kitchen, fundamental knife skills, restaurant operations, food hygiene and go on a range of outings designed to give them an insight into working as a professional chef. From there, they will be placed in some of Sydney’s top restaurants alongside well-known culinary mentors.
