The National Indigenous Culinary Institute (NICI) is an industry inspired and initiated program of national significance to create highly skilled Indigenous chefs. The NICI program offers elite training and experience for aspiring Indigenous chefs under the culinary guardianship of some of Australia’s top restauranteurs – from Café Sopra, Rockpool Bar & Grill, Aria, Icebergs Dining Room and Catalina.
After a successful inaugural year in 2012, the National Indigenous Culinary Institute has continued to grow throughout 2013.
The program now has a large number of Sydney’s leading restaurants and chefs on board to create a skilled Indigenous workforce for the hospitality industry and is earmarked to be expanded in the future.
